8 small flour tortillas

Instructions
Divide ground chicken into portions and press evenly onto each tortilla.
Season with salt and pepper.
Heat a skillet over medium-high heat and add oil.
Place tortilla chicken-side down and cook for 3–4 minutes until crispy and fully cooked.
Flip and cook tortilla side for 1–2 minutes until golden and crisp.
Remove from skillet and drizzle buffalo sauce over the chicken.
Add shredded cheese while hot so it melts.
