  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3/4 cup dried apricots, finely chopped
  • 1/2 teaspoon cinnamon (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Chop the dried apricots into small pieces and set aside.
  3. In a bowl, whisk together the flour, baking soda, salt, and cinnamon.
  4. In another mixing bowl, cream the softened butter and sugar together until light and fluffy.
  5. Add the egg and vanilla extract to the butter mixture and mix until smooth.
  6. Gradually add the dry ingredients to the wet mixture and mix until a soft dough forms.
  7. Fold the chopped dried apricots into the cookie dough until evenly distributed.
  8. Scoop tablespoon-sized portions of dough and place them on the prepared baking sheet, spacing them apart.
  9. Flatten the dough slightly with the back of a spoon.
  10. Bake for 10–12 minutes or until the edges are lightly golden.
  11. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a cooling rack.

Notes

  • If dried apricots are very firm, soak them in warm water for 5 minutes and dry them before chopping.
  • Do not overbake the cookies to maintain a soft texture.
  • Chilling the dough for 20 minutes can help create thicker cookies.
  • Store cookies in an airtight container at room temperature for up to 4 days.
