  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 3/4 cup (1 1/2 sticks) unsalted butter, cold and cubed
  • 2 cups sour cherries (fresh, frozen, or jarred), pitted and drained
  • 2 tablespoons sugar (for cherry filling)
  • 1 tablespoon cornstarch (optional, for thickening)

Instructions

  1. Preheat oven to 375°F (190°C). Line an 8×8 or 9×9 inch baking dish with parchment paper.
  2. In a large bowl, whisk together flour, sugar, and salt.
  3. Add cubed butter and mix with a fork or pastry cutter until the mixture resembles coarse crumbs.
  4. Press two-thirds of the crumb mixture into the prepared pan to form the base.
  5. In another bowl, mix the pitted sour cherries with sugar and cornstarch (if using).
  6. Spread the cherry mixture evenly over the base crust.
  7. Sprinkle the remaining crumb mixture over the top of the cherries.
  8. Bake for 35–40 minutes until the top is golden and the cherry filling is bubbling.
  9. Allow to cool completely in the pan. Chill before cutting for clean slices.

Notes

  • If using frozen cherries, thaw and drain before use to prevent a soggy crust.
  • Jarred cherries should be packed in water or juice, not syrup.
  • Add almond extract or lemon zest for enhanced flavor.
  • Bars store well refrigerated for up to 5 days or frozen for up to 2 months.
