  • 1 cup frozen spinach, thawed and squeezed dry
  • 1 cup canned artichoke hearts, drained and finely chopped
  • 4 oz cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/3 cup breadcrumbs
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: red pepper flakes or Italian seasoning

Instructions

  1. Preheat the oven to 375°F and line a baking sheet with parchment paper or grease a mini muffin pan.
  2. Prepare the spinach by squeezing out all excess moisture.
  3. In a large bowl, mix cream cheese, mozzarella, and Parmesan until smooth.
  4. Add the egg and stir until fully incorporated.
  5. Fold in spinach, artichokes, breadcrumbs, garlic, salt, and pepper.
  6. Scoop the mixture into evenly sized portions and place on the baking sheet or into muffin cups.
  7. Bake for 18–22 minutes, until set and lightly golden on top.
  8. Let cool slightly before serving.
