  • 1/4 cup sliced almonds or walnuts
  • 2 tablespoons sunflower seeds (optional)
  • 3 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Rinse the spring mix greens under cold water if needed and dry them using a salad spinner or clean towel.
  2. Slice the cucumber and radishes thinly and shred the carrots.
  3. Cut the cherry tomatoes in half.
  4. Place the spring mix greens in a large salad bowl.
  5. Add cucumber, radishes, carrots, and cherry tomatoes to the bowl.
  6. Sprinkle sliced almonds and sunflower seeds over the salad.
  7. In a small bowl, whisk together olive oil, lemon juice, honey, salt, and black pepper to prepare the dressing.
  8. Drizzle the dressing over the salad.
