  • 2 cups fresh strawberries, chopped
  • 1 1/2 cups fresh rhubarb, diced
  • 13 tablespoons honey or maple syrup (to taste)
  • 2 tablespoons chia seeds

Instructions

  1. Add chopped strawberries, diced rhubarb, and honey or maple syrup to a medium saucepan over medium heat.
  2. Cook for 5–8 minutes, stirring occasionally, until the fruit softens and releases juices.
  3. Mash the fruit gently with a fork or potato masher to reach your desired texture.
  4. Continue simmering for 10–15 minutes until the rhubarb is tender and the mixture thickens slightly.
  5. Remove from heat and stir in chia seeds until evenly combined.
  6. Let the mixture sit for 5–10 minutes, then stir again as it begins to thicken.
  7. Allow the jam to cool completely before transferring to a clean glass jar.
  8. Store in the refrigerator and use within 10 days.
