  • 2 pounds boneless skinless chicken breasts or chicken thighs
  • 1 cup pineapple juice
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 1/3 cup brown sugar
  • 1/4 cup soy sauce
  • 3 cloves garlic, minced
  • 1 tablespoon cornstarch
  • 2 tablespoons water (for cornstarch slurry)
  • 1 bell pepper, chopped (optional)
  • 2 green onions, sliced (optional garnish)
  • 1 teaspoon sesame seeds (optional garnish)

Instructions

  1. Place the chicken breasts or thighs evenly in the bottom of the crockpot.
  2. In a mixing bowl, combine pineapple juice, brown sugar, soy sauce, and minced garlic. Stir until the sugar dissolves.
  3. Add pineapple chunks and optional bell peppers over the chicken in the slow cooker.
  4. Pour the prepared sauce evenly over the chicken and pineapple.
  5. Cover and cook on low for 5–6 hours or on high for 3–4 hours until the chicken becomes tender.
  6. About 20 minutes before serving, mix cornstarch with water to create a slurry.
  7. Stir the slurry into the crockpot to thicken the sauce.
  8. Once the sauce thickens, shred or serve the chicken whole and garnish with green onions or sesame seeds if desired.
  9. Serve warm over rice or alongside vegetables.

Notes

  • Chicken thighs can be used instead of chicken breasts for juicier results.
  • Avoid adding too much extra liquid since pineapple releases natural juice during cooking.
