Instructions

  1. Preheat the oven to 350°F (175°C). Line or grease a 12-cup muffin tin.
  2. In a large bowl, whisk together the mashed sweet potatoes, eggs, Greek yogurt, maple syrup, oil, and vanilla until smooth and well combined.
  3. Sprinkle the flour, baking powder, baking soda, cinnamon, and salt over the wet mixture. Gently fold together until just combined—do not overmix.
  4. Fold in chopped walnuts if using.
  5. Divide the batter evenly among muffin cups, filling about ¾ full.
  6. Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool in the pan for 5–10 minutes before transferring to a wire rack to cool completely.
