Ingredients

Scale
  • 4 lobster tails (about 4–6 oz each)
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs or panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon lemon zest (optional)
  • Vegetable oil or canola oil for frying

Instructions

  1. Thaw lobster tails completely if frozen by placing them in the refrigerator for several hours.
  2. Rinse the lobster tails under cold water and pat them dry with paper towels.
  3. Using kitchen scissors, cut through the top shell of each lobster tail and gently lift the lobster meat slightly above the shell to butterfly it.
  4. Season the lobster lightly with salt, pepper, garlic powder, and paprika.
  5. Prepare three bowls: one with flour, one with beaten eggs, and one with breadcrumbs or panko.
  6. Dip each lobster tail into the flour mixture, ensuring it is fully coated.
  7. Next, dip the lobster tail into the beaten eggs.
  8. Roll the lobster tail in breadcrumbs, pressing gently so the crumbs stick evenly.
  9. Heat cooking oil in a deep frying pan to about 350°F (175°C).
  10. Carefully place the coated lobster tails into the hot oil and fry for 3–5 minutes until golden brown and crispy.
  11. Remove the lobster tails using tongs and place them on paper towels to drain excess oil.
  12. Allow the lobster tails to rest for a few minutes before serving.

Notes

  • Use panko breadcrumbs for extra crispiness.
  • Do not overcrowd the pan while frying to maintain the correct oil temperature.
  • Lobster cooks quickly, so avoid overcooking to keep the meat tender.
  • A cooking thermometer helps maintain the ideal frying temperature of 350°F.
  • Serve with lemon wedges or garlic butter sauce for extra flavor.
