Ingredients

Scale
  • 1¼ cups whole milk
  • 2¼ teaspoons active dry yeast (or 1 packet)
  • ¼ cup honey
  • 4 tablespoons melted butter, divided
  • 1 large egg, at room temperature
  • 1 teaspoon salt
  • 4 cups (480 grams) all-purpose or bread flour

Instructions

  1. Bring milk to a near boil, then let cool to lukewarm (80-90°F)
  2. Mix milk, yeast, and honey in a bowl. Let sit 5 minutes until foamy
  3. In large bowl, combine 3 tablespoons butter, milk mixture, egg, salt, and half the flour
  4. Gradually add remaining flour until soft dough forms
  5. Knead 8 minutes until smooth and elastic
  6. Place in greased bowl, cover, rise 1 hour until doubled
  7. Punch down, roll to ½ inch thick, fold in half, cut into 24 squares
  8. Place on greased baking sheets, cover, rise 30-40 minutes
  9. Preheat oven to 350°F, bake 12-15 minutes until golden
  10. Brush with remaining melted butter while hot

Notes

  • Make sure yeast is fresh and not expired
  • Scald milk but don’t boil – small bubbles around edges is perfect
  • Dough should be slightly sticky but not wet
  • Can be made ahead – refrigerate shaped rolls up to 15 hours
  • Freeze baked rolls up to 3 months
  • For bread machine: use dough cycle, then shape and bake as directed
