  • 1 teaspoon vanilla extract
  • 1/2 cup dairy-free chocolate chips
  • 2 cups vegan vanilla or chocolate ice cream
  • 1/4 cup dairy-free chocolate sauce
  • Optional toppings: chopped nuts, berries, vegan whipped cream

Instructions

  1. Preheat the oven to 350°F and line an 8-inch square baking pan with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
  3. In a separate bowl, mix granulated sugar, brown sugar, plant-based milk, oil, and vanilla until smooth.
  4. Combine wet and dry ingredients, stirring just until mixed, then fold in chocolate chips.
  5. Pour the batter into the prepared pan and spread evenly.
  6. Bake for 22–26 minutes, until the center is set but still slightly soft.
  7. Cool brownies for at least 20 minutes, then cut into squares.
  8. To assemble, place a warm brownie in a bowl, add vegan ice cream, drizzle with chocolate sauce, and add desired toppings.
