Instructions

  1. Preheat oven to 350°F (175°C).
  2. Brown ground beef in a large skillet over medium heat.
  3. Drain excess grease from the skillet.
  4. Add taco seasoning and water to the beef.
  5. Simmer for 3 to 5 minutes until thickened.
  6. Stir in black beans, corn, and diced tomatoes with green chilies.
  7. Cook for an additional 3 minutes.
  8. Grease a 9×13-inch baking dish.
  9. Spread half of the corn chips evenly across the bottom.
  10. Spoon the beef mixture over the chips.
  11. Sprinkle half of the cheddar cheese over the meat mixture.
  12. Add the remaining corn chips.
  13. Top with the remaining cheddar cheese.
  14. Bake for 20 to 25 minutes until hot and bubbly.
  15. Remove from oven and let rest for 5 minutes.
  16. Top with lettuce, tomatoes, sour cream, avocado, green onions, and jalapeños if desired.
  17. Serve warm.
