2 fl oz Empress Gin
½ fl oz Empress Gin (optional, for topping)
3 fl oz sparkling water (or club soda, tonic water, or lemon soda)
2 fl oz freshly squeezed lemon juice
½ fl oz blue curaçao
½ fl oz herbal simple syrup (optional)
⅛ tsp pearl luster dust
Ice to serve
Optional: small nugget of dry ice
Instructions
Fill a highball or clear glass with ice.
Sprinkle in the pearl luster dust.
Pour in 2 fl oz Empress Gin, sparkling water, and herbal simple syrup if using. Stir to combine.
Add lemon juice and watch the color change from purple to pink.
Slowly pour the blue curaçao to create a gradient effect as it sinks to the bottom.
Optionally float ½ fl oz Empress Gin on top by pouring over the back of a spoon.
Garnish with a rosemary sprig or lemon twist. Add dry ice for a smoky effect if desired.
Serve immediately with a straw and enjoy!

Use butterfly pea flower tea ice cubes for a non-alcoholic version.
