Ingredients
Scale
5 red chili peppers, stems removed
4 garlic cloves, peeled and chopped
1 tbsp olive oil
1 tsp salt
1 tsp black pepper
1/2 cup apple cider vinegar
1 tbsp honey (optional)
1/4 cup mayonnaise
1/2 cup cheddar cheese, grated
1/4 cup heavy cream
1 tbsp butter
Instructions
Remove stems from red chili peppers and chop them with the garlic cloves.
Heat olive oil in a medium saucepan over medium heat. Add chopped peppers and garlic and sauté for 2–3 minutes.
Add salt, black pepper, and apple cider vinegar. Let simmer for 5 minutes.
Transfer mixture to a blender and blend until smooth.
Pour blended mixture back into the saucepan. Add mayonnaise and stir to combine.
Add grated cheddar cheese, heavy cream, and butter. Stir over low heat until cheese melts and sauce thickens.
Adjust seasoning to taste. Add honey if desired for sweetness.
Transfer sauce to a jar or cup and allow to cool slightly before serving.
Notes
For less heat, remove seeds from chili peppers before chopping.
Use an immersion blender after adding cheese for extra smooth consistency.
Gradually add salt and honey to suit your taste preferences.
To thin the sauce after cooling, stir in a splash of heavy cream when reheating.
