¼ cup butter (or pan drippings for extra flavor)

¼ cup all-purpose flour

1 ½ cups chicken broth (preferably low-sodium)

1 ½ cups beef broth (preferably low-sodium)

½ tsp onion powder

½ tsp garlic powder

½ tsp black pepper (freshly ground for best results)

Instructions

Make a Roux

In a medium saucepan, melt the butter over medium heat.

Whisk in the flour to form a roux. Stir constantly for about 2-3 minutes, until it turns golden brown and smells slightly nutty.

2. Add the Broth

Gradually whisk in the chicken broth, followed by the beef broth, making sure to avoid lumps.

3. Season the Gravy

Add onion powder, garlic powder, and black pepper.

Continue whisking and bring the mixture to a gentle simmer.

4. Simmer and Thicken

Let the gravy simmer for 5–7 minutes, whisking frequently, until it thickens to your desired consistency.

5. Taste and Adjust

Taste and add salt or more pepper if needed. You can also add a dash of soy sauce for extra umami if desired.

6. Serve

Remove from heat and pour over mashed potatoes, fried chicken, or biscuits.

Notes

For smoother gravy, strain it before serving.

If it gets too thick, whisk in a splash of warm broth to thin it out.
